Lamb in Mushroom Sauce
Ingredient List
Lamb in Mushroom Sauce Serves 4-6
1 Lamb or vegetable stock cube, dissolved in 3 tbl sp of hot water
1 Large onion, thinly sliced
1 Garlic clove, crushed
1 Green pepper, seeded & sliced
1lb lamb, cubed
4oz mushrooms, sliced
Can condensed mushroom soup (under 5g fat per 100g)
1 tsp dried marjoram
Salt & freshly ground black pepper
Instructions
Pre-heat over to 130c , 250f Gas ½
In a pan heat stock mixture, add onion, garlic & pepper & cook gently for 2 - 3 minutes.
Stir in lamb & cook until browned on all sides.
Stir in mushrooms, soup, marjoram & season to taste with salt & pepper.
Bring to boil & transfer to casserole dish.
Cook in oven for 2 ½ hour
Serve with fresh green veg & mash potatoes made with 0% Greek yoghurt
