Carrot & Corianda Soup
Ingredient List
Carrot & Coriander Soup
2lbs carrots, sliced
3 celery sticks, sliced
2 onions, chopped
1 tbl sp fresh, chopped coriander
1 veg stock cube
2 pts hot water
Salt & freshly ground black pepper
2 tbl sp low fat fromage frais
Instructions
Dissolve the stock cube in a saucepan with 2 tbl sp hot water & cook carrots, onions & celery for 2 - 3 minutes.
Gradually add all the water & cook the veg’s over low heat until soft.
Liquidise until smooth, add the chopped coriander, season with S & P.
Swirl a teaspoon of fromage frais in each bowl when serving.
