Chilled cucumber & Avacado Soup

Chilled Cucumber Avocado SoupThis chilled creamy soup is great for hot days. It is filling and very low in calories. Perfect for a light lunch or as a dinner starter.
INGREDIENTS
1 chilled cucumber
1 avocado
2 spring onions, finely chopped
42 tbl sp mint leaves, chopped (can be left out)
1/2 pt semi skimmed milk
1pt cold water
salt and pepper to taste
Instructions
Cut cucumber into 3 equal pieces, then coarsly chop 2 of the cucmber pieces. Coarsely chop half the avacado.
Blend together the chopped cucmber & avacado & mint leaves, onions, milk & water until smooth. Taste & season with salt & pepper to taste.
Chill soup, uncovered for 15 minutes
Cut remaining cucumber & avacado into 1/4 inpieces & stir into the soup.
