Vegetable Curry
Ingredient List
Vegetable curry -
1 stock cube, crushed & mixed with 3 tbl sp hot water
1 large onion, chopped
2 leeks, chopped
1 garlic clove, crushed
400g cooked chopped carrots & cauliflower or 100g bag frozen veg mix
1x400g tin tomatoes
2 tbl sp tomato puree
1 tbl sp fresh chopped coriander
2 tsp curry powder or to taste.
Salt & freshly ground black pepper
Prep 5 mins - Cooking time 20mins - Serves 4Instructions
Heat the stock mixture in non stick pan, add onion, leeks & garlic & cook for 1-2mins
Stir in curry powder then add tin tomatoes, tomato puree, cooked or frozen vegetables topping up with extra vegetable water/stock if required.
Check the seasoning.
Just before serving add the coriander.
Serve with boiled rice.
