Spicy Lemon Chicken
Ingredient List
- 4 Skinless Chicken Breasts
- 1/2 pint tomato juice
- 2 tablespoons Dijon mustard
- 1 red chilli, seeded & finely chopped
- 1 tablespoons soy sauce
- 2 teaspoons paprika
- 2 teaspoons chopped fresh ginger
- 2 tablespoons chopped fresh parsley
- salt & freshly ground black pepper
Instructions
Preheat the oven to 190c, 375F, Gas Mark 5
Place the chicken breasts in an oven proof dish or on a baking tray. Season the chicken well on both sides.
Combine the remaining ingredients in a bowl & spoon over the chicken breasts.
Place the chicken in the oven & cook for 25 - 30 minutes until the juices run clear.
Serve with rice & finely chopped salad.
