Rice & Kidney Beans
Ingredient List
14 oz Can kidney beans, drained
1 pt vegetable stock
6 spring onions, chopped
2 sprigs fresh thyme
Freshly ground black pepper & salt , to taste
7oz basmati rice
2 crushed garlic cloves(optional)
1 red chilli
Instructions
Put stock, beans, onions, thyme sprigs, garlic,(if using) & black pepper in large pan & top up with liquid to there is just over 2 times more liquid than rice & beans.
Place the whole chilli on top & bring to the boil. Reduce heat & simmer for 15 - 20 minutes until all the liquid is absorbed & rice is tender.
Do not be tempted to stir whilst cooking or allow the chilli to burst.
Remove & discard the chilli & thyme stalks.
Lightly fluff up the rice & beans & serve.
