Turkey & Ginger Stir Fry
  • 450g (1lb) turkey fillets cut into strips
  • 1 medium red onion, finely sliced
  • 1 red pepper, seeded & sliced
  • 2 small courgettes, sliced
  • 115g (4oz) chestnut mushrooms, sliced
  • 2 teaspoons fresh dinger, peeled & finely chopped
  • 1 tablespoon light soy sauce
  • 1 tablespoon runny honey or mango chutney
  • 2 teaspoons chilli sauce 

Instructions

Serves 4, 229 cals per serving, Prep time:- 10mins cooking time:- 15-20mins

  1. Heat a non stick wok or frying pan, add the turkey strips & dry fry for 5-6 minutes of until just cooked. Remove from the pan & set aside.
    (If preferred crumble a vegetable or chicken stock cube into wok with 3 table spoons of water before adding the turkey).
  2. Add the onion, pepper & courgettes to the pan & fry for 2-3 minutes. Add the mushrooms & ginger & mix well.
  3. Return the turkey to the pan & continue cooking.
  4. Mix together the soy sauce, honey & chilli & add to the pan, coating the meat & vegetables. Stir fry comining all the ingredients until the meat is fully cooked. Serve immediately on a bed of noodles or rice.
