Passionate pork casserole
Ingredient List
1 red onion, chopped
2 garlic cloves, crushed
450g lean pork, diced
1 x 2 cm peice root ginger, peeled & finely chopped
1 - 2 tblsp veg stock powder
1/4 pt tomato passata
1/2 pt passion fruit or mango juice
1 tblsp runny honey
salt & freshly groung pepper
Instructions
Heat large, non stick frying pan or wok. Add onion & garlic & fry until soft.
Add diced pork & continue cooking to seal meat on all sides.
Stir in remaining ingredients & mix well, adding a little water if needed. Cover & simmer gently for 40 minutes or until meat is tender. Serve with boiled new potatoes & unlimited veg.
