Easy, speedy beef curry

Easy, speedy Beef Curry

1 onion, finely chopped

2 garlic cloves

1lb (450g) lean beef cut into thin strips

2 tablespoons Madras curry powder or paste

2 courgettes

2x14oz (2x400g) cans chopped tomatoes

Salt & freshly ground black pepper

2 tablespoons fresh, chopped coriander

2 tablespoons low fat natural yoghurt

 

Instructions

Heat a non stick wok or large frying pan. Dry fry the onion for 2-3 minutes until soft. Add garlic & beef & cook for 2 - 3 minutes until the beef is browned.

Add the curry powder or paste & cook for a further minute, stirring well. Add courgettes & tomatoes & season. Simmer for 3-4 minutes until the sauce thickens. Remove from heat, stir in the coriander & yoghurt & serve with boiled rice. Flavour will be improved if this is made the day before.
