Salmon & Asparagus in Foil

Steamed to perfection in about 15 minutes, this healthy and nutritious salmon and asparagus dish makes a quick and easy dinner with very little clean up. Serve with whole grain rice or couscous and a squeeze of lemon juice. Be careful when opening the foil packs, as the steam will be very hot.

Ingredients:
4 sheets 12” x 18” foil
4 x 5oz salmon fillets
1lb asparagus
Jiuce of 1 lemon juice
Freshly ground black pepper
Instructions
Preheat oven to 200c, 400f, Gas 6
Break ends off asparagus spears and divide spears into four portions.
Place one salmon fillet in the middle of each sheet, along with a portion of asparagus. Drizzle with lemon juice and add fresh ground black pepper.
Bring up sides of foil and fold the top over twice. Seal the ends, leaving room for air to circulate inside the packet. Place on a baking tray and cook in oven for 15-18 minutes, until salmon is opaque. Serves 4.
