Coq au vin
Ingredient List
COQ AU VIN - Easy
2 skinless chicken leg joints & 2 skinless chicken breasts
2oz lean back bacon, fat & skin removed, chopped
12oz peeled shallots
12oz carrots, sliced
½ pt red wine
½ pt chicken stock
1 tbl sp tomato puree
2 small garlic cloves, crushed
8oz button mushrooms
1 ½ tbl sp cornflour
1 bouquet garni
Salt & freshly ground black pepper
Instructions
Pre-heat oven to 180C /350F/gas 4
Place chicken joints in large casserole dish with bacon, shallots & carrots.
Mix wine, stock, puree, garlic & seasoning & pour over chicken. Add bouquet garni.
Cook for 1 hour then add mushrooms.
Cook for 30 - 60 mins until chicken is cooked & tender.
Discard bouquet garni. Blend cornflour with 3 tbl sp water & stir into casserole, stirring until it comes to the boil & thickens.
