Ingredient List

Herb Pasta

200g Pasta

1 Large red onion

1 Red pepper

1 small can sweet corn

1 tbl spFresh mint

1 tbl sp fresh parsley or coriander

1 stock cube (your choice of flavour) melted in 3tbl sp boiling water

Balsamic vinegar, to taste

Lemon or lime juice, to taste

Blck pepper

 

 

Instructions

Cook pasta, drain & place in heatproof mixing bowl with stock mixture, balsamic vinegar & lemon or lime juice.

Mix & leave to marinade for an hour.

Chop pepper & onion into small chunks.

Finely chop herbs & drain sweet corn.

Add to pasta & stir, adding black pepper to taste. Best kept in fridge & eaten the following day.
